Fettuccine

Why give a reason for your
friends and family to call 911? Keep
yourself healthy by cutting down on saturated fats, sodium and simple
sugars. Here is a recipe for an old
favorite “no-no”, turned into an old favorite “yes”!
For this recipe, the
“no-no” is the sauce, here is a trimmed down version:
Ingredients:
2
teaspoons of butter
2 cloves
of garlic, minced
3
tablespoons of flour
2 cups of
fat-free half and half
1/4
teaspoon of salt, pepper and nutmeg
1/4 cup of
grated Parmesan
1 pound of
fettucine (or other pasta of your choice), cooked
Instructions:
1. Melt 2 teaspoons of butter in a
medium saucepan.
2. Add 2 cloves of garlic, minced;
cook over low heat for 1 minute or until fragrant.
3. Whisk in 3 tablespoons of flour,
then whisk in 2 cups of fat-free half and half until well combined.
4. Finally whisk in 1/4 teaspoon each
of salt, pepper and nutmeg, and bring to a boil, whisking frequently.
5. Reduce heat and simmer 5 minutes
or until thickened.
6. Remove from heat and stir in 1/4
cup grated Parmesan cheese.
7. Serve with 1 pound of cooked
fettuccine.
